Feed the Obsession
Discard half, feed with fresh flour and water. Repeat for 3–5 days until your starter is reliably doubling.

Stored in a cool, dry place, EAD will stay viable for up to 12 months unopened. Keep it away from heat and moisture and he'll be ready whenever you are.
Nope. A jar, a kitchen scale, flour, water, and patience. That's it. A Dutch oven is helpful for baking the boule but not strictly required.
We recommend organic unbleached all-purpose or bread flour. Avoid bleached flour — it can slow activation. Whole wheat flour can also help speed things up.
We recommend filtered or spring water. Chlorinated tap water can inhibit fermentation. If tap water is all you have, let it sit uncovered for an hour first to let the chlorine dissipate.
It happens occasionally — usually due to water temperature or flour type. Email us and we'll troubleshoot with you step by step, or send a replacement. We stand behind EAD completely.
